Vegan Caprese Salad
This vegan version of the caprese salad simply substitutes traditional mozzarella with vegan mozzarella, allowing those who follow a plant-based diet or have lactose intolerances to enjoy a delicious and similar experience. Vegan mozzarella, made from ingredients like coconut oil or cashew milk, replicates the texture and creamy melt of dairy mozzarella without using any animal products.

Ingredients
- 1 large red (or yellow) steak tomato
- 1 cup A handful of fresh arugula
- 1/4 cup Vegan mozzarella cheese; shredded or sliced thin Recommended brands: Daiya or Violife
- 1 tbsp extra-virgin olive oil
- 1 tbsp Balsamic vinegar – or Balsamic glaze
- Sea salt and freshly ground black pepper to taste
Instructions
- Slice the tomato into thick rounds (about 1/2-inch thick). Place the slices on a serving plate.
- Place a small handful of fresh arugula on top of each tomato slice, ensuring an even spread.
- Add the shredded or thinly sliced vegan mozzarella on top of each slice
- Drizzle each tomato slice with extra-virgin olive oil and balsamic vinegar or glaze.
- Sprinkle a pinch of sea salt and freshly ground black pepper over each slice.
- Serve immediately as an appetizer, side dish, or light snack.
