Ingredients
  

  • 1 lb high-quality ground beef 80/20 mix for optimum juiciness
  • Kosher salt and freshly ground black pepper
  • 4 slices of cheese American cheddar, or Swiss work well
  • 4 soft hamburger buns preferably potato rolls
  • Toppings: lettuce tomato onions, pickles, condiments

Instructions
 

Preheat the Griddle

  • Heat a griddle or cast-iron skillet over medium-high heat. The surface should be hot enough to sizzle upon contact with the meat.

Form the Patties

  • Divide the ground beef into 4 equal portions and gently roll them into loose balls. Do not overwork the meat to ensure a tender burger.

Smash the Patties

  • Place a ball of beef on the hot griddle. Immediately press it down firmly with a sturdy spatula (or burger press) until it’s about ½ inch thick. Season generously with salt and pepper.

Sear to Perfection

  • Cook the patties for about 2 minutes until the edges are crispy and the bottom develops a deep brown crust. Flip the patties, add a slice of cheese to each, and cook for another minute until the cheese melts.

Prepare the Buns

  • Toast the hamburger buns on the griddle until lightly crisp.

Assemble the Burger

  • Place the cheesy patty on the bottom bun, then layer with lettuce, tomato, onions, pickles, and your favorite condiments.

Serve and Enjoy
